The Interesting Eating Company has opened a pop-up coffee shop in the heart of Liverpool One.
As part of an on-going company expansion, directors of the Allerton Road eatery, Nichola Lee and Andrea Edwards, have secured a two-month lease at the entrance to Peter’s Lane, which hosts leading brands such as Ted Baker, Beauty Bazaar Harvey Nichols and Michael Kors.
Nichola said:
“We are thrilled to be expanding our business by opening the pop-up coffee shop in such a prime city centre location. We feel that Liverpool ONE is the perfect place to showcase our unique food and drink to customers such as families with children, students, business people and foodie lovers alike.”
The pop-up venue serves the eatery’s signature sweet pancakes and waffles including the popular American-style pancakes with bacon and maple syrup, as well as a variety of sandwiches, ‘grab and go’ light bites, cakes and a selection of freshly prepared gluten free variations.
Andrea said:
“Having built a growing reputation across South Liverpool for our originality and fresh thinking when it comes to novel food and drink – we decided it was time to maximise our customer reach and set up in the city. We are excited to see the response from both new and existing customers and hope that our pop-up will be much loved by all.”

The Interesting Eating Company is the latest brand to join Liverpool ONE’s line-up. Cass Art, the independent arts supplies store, opened on School Lane on March 21, and they follow Michael Kors and Cote, both of whom opened in the last six months, along with Zara’s new regional flagship.
Prior to the pop-up venue, The Interesting Eating Company expanded into the retail park environment back in July 2014, after setting up an in-house coffee shop within Ultimate Outdoors – Preston, based in Deepdale Shopping Park. As part of the long-term affiliation with the JD Sports division, Ultimate Café was established to offer light refreshments and mirror The Interesting Eating Company’s original branding and offerings.
