Duke Street Market welcomes new sandwich brand

When it reopens on May 17, Duke Street Food and Drink Market will welcome a new operator to the Liverpool venue offering sandwiches inspired by Middle Eastern flavours and dishes. Tony McDonough reports

Duke Street Food and Drink Market will reopen on May 17 and will welcome a new food operator to the venue.

Sabich is a new casual food concept created by the team behind one of Liverpool’s best known restaurant brands, Maray. It will offer sandwiches, rotisserie chicken and sides all of which have been inspired by Middle Eastern flavours and dishes.

Named after the concept’s signature sandwich, Sabich is a combination of aubergine, eggs, tahini, and amba, served in a soft, pillowy pitta. It will add to the outlets the market is home to, including Cuban-inspired Cahita, Italian Cucina Di Vincenzo, seafood specialist Kelp, Asian-inspired Ginger and steakhouse kitchen Bone and Block.

Sabich’s rotisserie chicken is another menu staple. Slowly cooked in its signature harissa butter marinade, and served in either a baguette with chicken shmaltz aioli, pickles and slaw, or as a quarter/half/whole chicken with a selection of sides including tahini, zhug, pickles, turmeric eggs, amba and pitta bread.

Lee Bannon-Smith, general manager of Duke Street Food and Drink Market, said: “Sabich is completely different to any of the other food vendors at the market and we pride ourselves on providing a really varied offering and Sabich further adds to that.”

Thomas White, co-founder of Sabich, added: “Having been patrons of Duke Street Market for a long time, we are extremely excited to join their already stellar roster of operators.

“The Sabich concept is something we have wanted to explore for a while now and the market is the perfect environment to launch the brand. Fans of Maray will undoubtedly love what we are going to do here but it’s a wholly different offering and experience which we cannot wait to share.”
