Liverpool coffee shop entrepreneurs Christopher and Hayley Commerford to open third outlet in the city in a 3,500 sq ft unit that will create 15 jobs. Tony McDonough reports
Liverpool’s Parliament Square Coffee has unveiled plans to open a third outlet in the city, creating 15 jobs.
Founded by husband-and-wife team Christopher and Hayley Commerford, the brand launched its first site on Parliament Street in June 2023. This was followed by a second outlet in Clarence Street.
This site is also home to the Parliament Square Academy, an educational facility for aspiring coffee shop baristas.
Now the couple are to expand again with a 3,500 sq ft outlet opening in Cook Street, located between the business and retail districts, in spring 2026. It will offer the brand’s specialty coffee, supplied Ozone Coffee and a British-inspired brunch menu.
Christopher, from West Derby, spent a number of years working as a chef in hospitality before spotting an opportunity in the Parliament Square development to create a standout brunch and specialty coffee concept.
After two decades with British Airways, Hayley joined forces with Chris, and together they built Parliament Square Coffee. The new Cook Street site will also include a serviced meeting room for up to 12 guests, providing space for corporate bookings.
Hayley said: “Parliament Square Coffee has grown into an incredible brand, and we’re thrilled to be opening our third site in Liverpool—our new flagship on Cook Street.
“This store brings together everything our brand represents, from exceptional coffee and British-inspired food to a dedicated meeting space and expanded corporate catering. We’re extremely excited for this next stage.”
This year marked a new chapter for Parliament Square Coffee as the brand continued to celebrate modern British heritage and culture in all its diversity, across food, music, sport and shared history.
