Coffee shop brand opens third Liverpool venue
Liverpool coffee shop brand Parliament Square Coffee opens its third Liverpool outlet, creating 15 new jobs. Tony McDonough reports

Coffee shop brand Parliament Square Coffee has opened its third Liverpool venue in Cook Street in the city centre, creating 15 new jobs.
Spanning 3,500 sq ft, the new outlet will offer coffee, a British-inspired brunch menu and a new in-house bakery. It will showcase its speciality coffee as the House of Coffee, supplied by national partner Ozone Coffee.
Liverpool entrepreneurs Christopher and Hayley Commerford opened the first Parliament Square Coffee in Parliament Street in June 2023. This was followed by a second outlet in Clarence Street.
A new addition to the brand is the launch of an in-house bakery, led by local baker Jess Garland, formerly of Bakesale, who joins as head baker. This marks a milestone for the business as it brings its baked goods production fully in-house for the first time.
Jess will oversee a daily selection of freshly-baked cakes, pastries and seasonal sandwiches, which will be available not only at the new Cook Street flagship but across all three Parliament Square Coffee locations in Liverpool.
Cook Street will also feature a dedicated takeaway coffee bar, designed for the busy business district crowd looking to grab a speciality coffee alongside fresh bakes and sandwiches on the go.


Alongside the existing brunch menu, the team, led by new recruit Jon Baldwin, head of operations, will introduce a selection of classic British sandwiches, served from midday onwards and designed to complement the brand’s growing food offering.
Opening hours for the new flagship are 7am to 7pm Monday to Friday, and 8amto 7pm on Saturdays and Sundays.
