Rudy’s seeks staff for third Liverpool outlet
North West pizza brand Rudy’s is looking to hire new staff for its third outlet in Liverpool which will open before Christmas. Tony McDonough reports
Pizza brand Rudy’s Pizza Napoletana will open its third outlet in Liverpool in December and is seeking to hire new staff.
Rudy’s will trade from the former site of The Leather Satchel Company at the Royal Albert Dock. It will join the other city centre locations Bold Street and Castle Street. First Rudy’s was opened in Castle Street in 2018 and this was followed by a Bold Street branch in 2021.
It has been serving classic Neapolitan pizza since 2015 from the original Rudy’s in Ancoats in Manchester. The business follows the authentic Neapolitan tradition of pizza making, serving classic recipes such as marinara, margherita and calabrese.
Rudy’s dough is made fresh daily using Caputo ‘00’ flour which ferments for at least 24 hours. This is used with the “best quality ingredients” imported from Naples, including San Marzano tomatoes grown on fields next to Mount Vesuvius, and Fior di Latte mozzarella.
In accordance with Neapolitan technique, the dough is cooked in a Stefano Ferrara oven for just 60 seconds. This results in a soft and light pizza with an airy and raised cornicione (the edge or rim of the pizza).
Emma Kidd, general manager of Rudy’s at the Royal Albert Dock, said: “We look forward to opening our third site in Liverpool. The team have loved serving our Neapolitan pizza in the city, and we hope this new site will be a welcoming addition to the heart of the city centre.”
