Entrepreneur ‘inspired by mum’ to open restaurant

As a new restaurant opens in Liverpool city centre the man behind it says he was inspired by his late mum to open the outlet which will focus on ‘sustainable wholefoods’. Tony McDonough reports

Liverpool’s newest restaurant has opened its doors this week and its founder says it will eschew “ultra-processed foods” in favour of “sustainable wholefoods”.

Entrepreneur Allan Eves has launched Hume in Gradwell Street, off Hanover Street, in the city centre. He will serve what he claims will be a nutrition-packed menu when it is open from Wednesdays to Sundays.

Allan says he wants to “make a positive impact for both its customers, the community and the wider world”. He plans to reach out to schools, universities, the NHS, the council and private sector organisations to promote healthier eating and living.

And, he adds, he was partly inspired to open Hume by his mum who died of cancer in 2024. Allan explained: “Hume is partly in honour of my mum who sadly passed away in 2024 to cancer.

“She was an extraordinary person and spent her life in the service of others. I’m hoping I can honour her memory by creating something which will contribute to the health and happiness of the Liverpool community and be in service to the natural world.

“Hume is focused on healthy choices and trying to put goodness into our bodies with our fantastic menu, while also respecting the sustainability and health of the planet too.

“The rise of non-communicable diseases, including cancer, are all heartbreakingly common, and they needn’t be. At Hume we’re also working to reduce and eliminate our waste, adopt circular economy principles and actively contribute to the Liverpool city region net zero pathway and sustainable development goals.”

One cornerstone of Hume’s ethos is that all dishes are made with wholefoods with no stabilisers, emulsifiers, added colourings, flavourings or sweeteners. Hume is meat-free too.

Some of the key dishes include Korean-style pak choi and crispy sesame tofu. the ‘ultimate’ beans on toast and lion’s mane steak made with mushrooms.

“With Hume, the plan is to create a place for healthy eating and living and myself and the team can’t wait to get started and introduce our philosophy to Liverpool,” added Allan.
